Southern Fried Chicken
Ingredients
- 1 fryer, cut into 8 pieces
- 1 cup flour
- 2 1/4 cups Crisco shortening
- kosher salt
- freshly ground black pepper
- 1/4 tsp cayenne (optional)
Instructions
- Rinse chicken thoroughly and dry completely. Salt and pepper chicken pieces.
- Heat shortening in cast iron skillet on medium-high heat until it's nearly at the smoke point, around 325° F. Be sure there's enough shortenting to cover at least half way up the chicken pieces.
- In a large ziplock bag, add flour (and cayenne, if using). Drop in chicken 1 piece at a time and shake to completely coat in the flour. Using tongs, carefully place chicken in hot oil skin side down. Cover and cook for 15 - 20 minutes. Turn chicken and finish cooking with the lid off, about 5 minutes. Remove chicken from oil and drain on rack over paper towels.
- Another option for coating the chicken: Beat two eggs. Place each piece of chicken, 1 at a time, in the bag and shake to coat the chicken. Then dip chicken into the egg to coat. Place the chicken back into the flour to coat for a second time.
