Biscotti a la Shoushig
Ingredients
- 1 2/3 cup flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 eggs, large
- 1 tsp vanilla
- 2 tbsp Frangelico (or similar liqueur)
- 3/4 cup sugar
- 1/4 cup canola oil
- 1 cup dried cranberries
- 1 cup pecans
- 1/2 cup miniature chocolate chips
Instructions
- Preheat oven to 350° F.
- Soft together flour, baking soda, and salt. Set aside. Mix together sugar, eggs, canola oil, vanilla, and liqueur. Add flour mixture to egg mixture. Add cranberries, pecans, and chocolate chips to batter. Mix well
- On one baking sheet make 2 loaves. Bake 30 to 35 minutes. Remove loaves from oven and lower temperature to 300° F. Allow loaves to cool for 10 minutes and slice to desired thickness. Lay slices on cookie sheets and bake an additional 25 minutes until golden.
