Ingredients
- 1 tbsp vegetable oil, plus more for brushing
- 1 medium onion, finely chopped
- 1 garlic clove, minced
- ¾ lb ground beef
- 1 cup salsa
- 2 tsp chili powder
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 10 6 inch flour tortillas
- ½ cup shredded cheddar cheese
Instructions
- Preheat oven to 400° F.
- Heat oil in a large skillet over medium heat. Add the onion and garlic and cook for 3 minutes, stirring often. Add the ground beef and cook until browned, breaking up any large pieces. Stir in ½ cup of the salsa, chili powder, salt, and pepper. Cook mixture over low heat, stirring occasionally, for 10 minutes.
- Place tortillas in a plate and cover with damp paper towels. Microwave tortillas until warm and pliable, about 45 seconds. Top each tortilla with ¼ cup of the beef mixture, spreading it to an inch from the edges.
